Development of Postbiotics’ Compositions Including the Evaluation of Its Bioactivity Against Pathogenic Bacteria and Their Produced Biofilms in the Dairy Industry

Project Details

Description

The aim of the research project is to develop a method for the production of postbiotics and to create compositions that effectively reduce the number and viability of planktonic pathogenic bacteria and have an inhibitory effect on the biofilms produced by these bacteria. The research aims to discover ecologically valuable alternatives to traditional antibiotics and disinfectants by reducing the use of chemical compounds and the development and spread of antimicrobial resistance within a single health framework - public, animal health and food production. The source of postbiotics will be lactic acid bacteria in the milk of healthy cows and/or traditional fermented products for Latvia.
